The most well-known potential health benefit of kimchi is supporting gut health. Our kimchi contains live bacteria (also known as probiotics) that develop during fermentation. These microorganisms that are found in kimchi can potentially help balance bacteria in the digestive track. Having a healthy gut is essential in digestion by helping to break down food and supporting the bodies digestion process. Many immune cells reside in the digestive system suggesting the potential of helping immune function as well. Our kimchi is naturally fermented and refrigerated meaning its alive, keeping all the probiotic benefits.

Kimchi is made from nutrient dense vegetables and seasonings creating a nutritious addition to a balanced diet. Depending on the variety of ingredients, kimchi provides vitamins A, C, and K as well as essential minerals such as potassium and iron. These nutrients can support vision, bone health, and immune function.

Kimchi contains several nutrients that contribute to the normal function of the immune system. Beneficial compounds found in vegetables and spices, such as Vitamin C are found in kimchi. It’s important to note that kimchi is not a cure or treatment for illness, but its nutrient dense ingredients can help support overall health with a balanced diet. Our kimchi contains live bacteria that supports a healthy gut microbiome. A large portion of our body’s immune system is related to the digestive track, so maintaining good gut health may help in supporting immune function.

Kimchi may contribute to heart health when enjoyed as part of an overall healthy diet. The vegetables used to make kimchi provide dietary fiber and plant compounds that are associated with cardiovascular wellness. Fermented goods are commonly included in balanced earing patterns that focus on whole, and minimally processed foods. Its important to recognize that kimchi is typically high in sodium, because salt is used to ferment the vegetables. If you are monitoring your sodium intake or managing high blood pressure, make sure to enjoy kimchi in moderation.

Lactic Acid Bacteria are a group of microorganisms that are the driving force behind the fermentation of kimchi. These bacteria are naturally occurring in the vegetables used when making kimchi. When the vegetables are mixed with salt and stored in airtight containers, the salt and low oxygen environment creates the growth of LAB. Some specific LAB include Leuconostoc, Lactobacillus, and Weissella, which all play roles in the fermentation process.
As the LAB consume the sugars found inside the vegetables, they produce lactic acid and other compounds. Lactic acid is a strong contributor in the probiotic properties that make kimchi gut healthy. As the lactic acid accumulates it lowers the pH of the kimchi creating an acidic environment. This helps preserve the food and prevent it from spoiling. During this process is when the kimchi develops its flavor, aroma, and texture.

Thank you for changing my life
Message:
Dear Micro Mama's, I have to thank you for changing my life, specifically thanking your Silly Dilly Carrots. It is somewhat embarassing, but for five or six years my stomach and intestines were making noise up to 20 times a day. It was audible to those around me, especially at work and in exercise classes. It was a huge struggle. Nothing was working! Even if I was 100% gluten- and dairy-free, on elimination -type diets, the sound continued. It made it hard to want to continue these diets that were helpful because they didn't solve the problem. Doctors could not identify any problems. My nutritionist suggested that I try probiotics - since I am good about taking medication on time - in a pill form. That wasn't sitting right with me because I already have several daily meds. She had mentioned fermented food as well. I went to Cambridge Naturals in Cambridge, MA and looked at their live culture items. Cabbage and kimchi seemed like they could be, ahem, farty. Beet juices looked scary. So, I bought your Silly Dilly Carrots. My stomach has not made any noise since then , which was at least a year ago. This has been a game-changer. I really cannot thank you enough. You have single-handedly fixed a problem that was weighing me down more and more every day. I eat roughly 1/4 cup once a day. I just cannot thank you enough. It tastes so good and is just so amazing. You are awesome. Thank you a million times, Caroline.
