Lacto-fermentation happens when the starches and sugars in vegetables and fruit convert to lactic acid by friendly lactic-acid producing bacteria. This produces not only a tangy, delicious product, but it also preserves it….. and does so much more than that! “The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. These beneficial organisms produce numerous helpful enzymes as well as antibiotic and anticarcinogenic substances. Their main by-product, lactic acid, not only keeps vegetables and fruits in a state of perfect preservation but also promotes the growth of healthy flora throughout the intestine.” *

1.)They are nutritionally dense 1oz. is an adequate serving. Loaded with vitamins, minerals, and enzymes
2.)They act as a catalyst for nutrient absorption with the foods you pair them with (why not mindfully & tastefully maximize your meal & dollar ?) Loaded with enzymes, prebiotics & probiotics that stimulate your unique digestive enzymes that further aid proper digestion for a healthy gut, mind, body and sense of well being = Power-housed goodness.
3.)They are really tasty & pair well with meats, cheeses, vegetable and potato dishes, salads, grains, legumes, pasta's & pizza's, any ethnic food, and just about any sandwich/burger you can imagine.
In working in collaboration with Tufts University, we learned through our DNA sequencing and population counts that our products contain up to 293 million colonized forming units of lactic acid bacteria per one once serving. Because these living probiotic foods start being absorbed from the moment they enter your mouth; some studies have found that they are 100 times more available than those probiotics found in pill form. So go ahead and add a couple more zeros to 293 million... that's a lot of good little buggers!
Our difference is FANTASTIC NEVER BREWED IN PLASTIC!!!! To our knowledge we are the only stand alone commercial fermenter east of the Mississippi who does not and will not ferment our vegetables in plastic! We believe this produces a superior product without leaching unknown petroleum based chemicals into your perfectly fermented vegetables. From day one we never fermented in plastics... we didn't want to eat them this way, so you don't need to either. Just because our competitors jar their finished product into glass; doesn't mean that they don't ferment in plastics.. ask and make an informed choice that best suits you.

Thank you for changing my life
Message:
Dear Micro Mama's, I have to thank you for changing my life, specifically thanking your Silly Dilly Carrots. It is somewhat embarassing, but for five or six years my stomach and intestines were making noise up to 20 times a day. It was audible to those around me, especially at work and in exercise classes. It was a huge struggle. Nothing was working! Even if I was 100% gluten- and dairy-free, on elimination -type diets, the sound continued. It made it hard to want to continue these diets that were helpful because they didn't solve the problem. Doctors could not identify any problems. My nutritionist suggested that I try probiotics - since I am good about taking medication on time - in a pill form. That wasn't sitting right with me because I already have several daily meds. She had mentioned fermented food as well. I went to Cambridge Naturals in Cambridge, MA and looked at their live culture items. Cabbage and kimchi seemed like they could be, ahem, farty. Beet juices looked scary. So, I bought your Silly Dilly Carrots. My stomach has not made any noise since then , which was at least a year ago. This has been a game-changer. I really cannot thank you enough. You have single-handedly fixed a problem that was weighing me down more and more every day. I eat roughly 1/4 cup once a day. I just cannot thank you enough. It tastes so good and is just so amazing. You are awesome. Thank you a million times, Caroline.
